The purpose of this articles is not to become wine experts but to dispense some little advice to make you match the right wine to the chosen dish.
RULES FOR PAIRING WINES
Let's start from the obvious rule that with red meat goes red wine and withe wine goes with the fish.
But does this rule still apply today? All cooking shows show how famous chefs and sommeliers make truly anarchic combination.
Rule n.1:
No type of great white liqueur wine should be paired with red meats and game.
Rule n.2:
No big red wine should be paired with fish.
Rule n.3:
White wines should be served before red wines (there are some exceptions for dessert wines).
Rule n.4:
The regional or local dish should be paired with wine from the same area to build an affinity of flavors and aromas.
Rule n.5:
When we are faced with a particularly fatty dish we must combine it with a fresh and tasty wine.
